The co-creator of the X-Men himself has a small cameo in the movie, but don't blink or you'll miss him. During the scene when the mutated Senator Kelly walks on the beach, Stan "the Man" Lee is the hot dog vendor!

When Wolverine and the other X-Men are aboard the X-Jet, Logan makes a comment about their black leather costumes and Cyclops says "What did you expect, yellow spandex?", which is what Wolverine wears in the earlier comic books and the first cartoon.
