Also, Hidden Mickey - when Quasi eats the grapes he leaves a few on the vine, in the lower left part seems to be a very familiar shape.

More Mickey - before the scene 8 minutes after Quasi is grown [where we see Esmarelda] you can view another Mickey as Quasi slides down a pillar to hug the gargoyles.

And in the wild ride sequence when Quasimodo climbs -or slides- down the cathedral carrying Esmeralda, he hangs from a gutter for one second, and if you look -with at least a magnifying glass- on the cathedral facade down the screen, you will be able to distinguish Donald and Goofy's faces among the gargoyles.
