After Unlocking Mace Windu for duel mode select him and fight against anyone. At the start of the fight he will say "I will strike you down with great vengeance". Would have been even better if he had gone the whole hog and added "With furious anger, those who attempt to poison and destroy my brothers"

Maybe he adds that against the Emporer :)
