after the genral orc says 'fire at will' because rohan is charging at them you see peter jackson on a horse, riding to battle.

That's not Peter Jackson. It's an extra that has roughly the same build as him, but it's not him.

I completely agree with David (from the last comment). If you freeze frame it (DVD: 2:00:31) and you're addicted to these movies as much as I am you definitely can see that this isn't Peter Jackson at all. Complete different face & beard (even if they could of added white in it)

Yeah, Peter Jackson's cameo is on the Mercenary ships, where he's the fat pirate who is walking across the deck in one scene and then (in the extended) gets shot and killed by Legolas.
