Yep- I checked the Internet Movie Database (www.imdb.com), which shows the complete credits for Scream. It lists: Wes Craven ..(as).. Fred, The Janitor (uncredited)

Actually, the scene with Wes Craven is shortly before Principal Hembry is killed. It's after he's seen the student who wore the Scream outfit and is hearing noises. He looks outside his office and sees the janitor standing there. After he says "It's just you, Fred" you can hear Wes Craven saying "You little prick." And it's in the Closed Captioning too. Interesting note... the Fonz wasn't credited for his work in this either.
